Does anyone have advice for road trip/hotel eating on WW?

Next week the fiance and I are taking a cross country trip and working on planning all the details. One thing I thought about was the food we should eat.

She does WW and since we're going to be driving a lot per day it's going to cut I to the time for exercising and all, and as good as just grabbing some Taco Bell or something when we need it sounds, we know that isn't ideal.

Any advice in some meals that can be kept in a cooler or with minimal prep from what would be offered in a regular hotel room? Ie mini fridge, microwave, possible single coil hot plate?
